These muffins are to die for! So light, fluffy and moist. And guess what? They're grain-free, packed full of protein, loaded with veggies and only sweetened with nature's finest. Need more convincing? They do have a high fat content, BUT healthy fats! And one won't screw up your macros for the day (I promise). :) Enjoy!
2 cups almond flour
1/2 cup vanilla protein powder (unsweetened)
1/4 cup coconut oil, melted
3 eggs, lightly beaten
1/2 cup honey (more or less depending on how many sugar/carbs you want)
1/8 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 cup grated zucchini (leave skin on for more nutrients)
1/5 cup chopped walnuts
1/4 cup chopped apricots
Mix everything together in a bowl, then add walnuts and apricots. Pour into lined muffin tin, about 3/4 full. Bake for roughly 20 minutes or until golden brown and toothpick comes out clean. Makes 9.
