Carrot Cake Pancakes
It seems sinful, but it's really not! You could consider this your meal that feels like a cheat, but without any guilt. :) Anyways, I found this recipe on Dashing Dish, but made quite a few alterations so it would be completely eat clean. Plus the flaxseed is an added bonus!


Pancakes
1 scoop vanilla protein powder
1/2 cup plain greek yogurt
1/2 tsp cinnamon
pinch of nutmeg
pinch of salt
1/2 tsp baking powder
2 egg whites
1 cup old fashioned oats (ground)
1/2 cup water
2-4 packets stevia (or 1-2 tsp. xylitol)
1/2 cup carrots (chopped)
1/4-1/2 cup flaxseed (ground)


1. Mix everything together in a blender. 
2. Cook as you would any pancake. 
3. Enjoy!


"Frosting" topping
1/2 cup low fat cream cheese
1/2 cup low fat yogurt cheese (click here to see how to make it)
dash of cinnamon
1 tsp agave nectar (don't use any more than this)
Xylitol to taste


1. Make yogurt cheese.
2. Mix everything together.
3. Top your pancakes!
